How to make Tequila Rose pancakes with boozy pink sauce

With pancake day and Valentine’s Day on the horizon, a pancake recipe that’s a little special could be in order.

Brunches at restaurants may be off the cards, but you can make something like these Tequila Rose pancakes to impress your partner or friends that’s just as good.

Using the strawberry cream liqueur, these pancakes have a boozy kick, but also have all the sweetness you’d expect from a Shrove Tuesday classic.

You will need to buy Tequila Rose for this recipe, but everything else should be in your storecupboard already.

Instagrammer Ohhsorosie – who created the recipe – put her pancakes and additions on a wooden board, making a sweet charcuterie board that’s ideal for picking at.

Here’s how to make them.

  • 40ml of Tequila Rose
  • 100ml of Semi Skimmed Milk
  • 3 Eggs
  • 115g of Plain Flour
  • 1tsp of Bicarbonate of Soda

  • 50g Melted Butter
  • 100g Icing Sugar
  • 40ml of Tequila Rose

  • Add all the pancakes ingredients into a bowl and mix until smooth.
  • Heat a glug of oil in a frying pan & then lower the temperature, before spooning 2-3 tbsp of mix into the pan for each pancake.
  • Gently cook each side, flipping the pancake occasionally – repeat until you run out of batter.
  • For the sauce, melt the butter in the microwave then add 40ml of Tequila Rose and mix together.
  • Add the icing sugar a spoonful at a time until combined.

Serve your pancakes with the sauce drizzled on top, as well as more for dipping.

Strawberries, chocolate, blueberries, sprinkles, and syrup make perfect additions, and don’t forget to add a pot of the sauce for dipping.
