Ingredients for a mushroom sauce
- 2 tbsp dried porcini mushrooms
- 1 tsp butter
- 2 shallots, finely diced
- 200g chestnut mushrooms, sliced
- 200g crème fraîche
Measure 100ml of water, and pour it into your kettle to boil it.
Alternatively, you can boil it on the hob.
Pour the boiling water over the dried porcini mushrooms.
Leave this to stand for five minutes.

Heat the butter in a saucepan.
Add the shallots to the saucepan.
Frying them gently until they are soft and translucent.
Add the chestnut mushrooms into the saucepan.
Cook for 5 mins more.
Once the five minutes is up, measure out 1 tbsp of the liquor from the porcini.
Pour it into the saucepan and discard the rest of the liquor.
Chop the porcini and add them to the pan.
Fold in the crème fraîche.
Bring the mixture to a simmer, and then season.
If you don’t have any creme fraiche, there’s plenty of alternative options, however.
Cream cheese is one option you can use instead.
Simply melt butter and add garlic, cooking over a medium heat for one minute.
Add the mushrooms and cook until the juices are running, then stir in cream cheese and warm over a low heat until it melts.
Or try using milk instead.
Melt butter in a medium saucepan over medium heat, then saute mushrooms until tender.
Stir in flour, milk and soy sauce, stirring until thickened. Season with salt and pepper to taste.

Whether you are a veggie or a meat-eater, a mushroom sauce is a versatile recipe that you should learn how to make.
