Teacher shares recipe to make no-bake rocky road crackles in just 30 minutes

A teacher from Sydney has shared her favourite ‘no-bake’ dessert that takes only half an hour to make.

Katie Lolas, 35, shared the rocky road crackles recipe, which is rich in nutrients, on her Instagram.

Similar to Rice Crispies crackles, but healthier, the dessert can be whipped up quickly and served as a healthy treat.

Katie’s recipe also serves 12 and can be kept up to a week.

So you can make a big batch and leave it in the fridge to munch on throughout the week.

To make the crackles, you’ll need popcorn, sultanas, cranberries, pumpkin seeds, shredded coconut, coconut oil, rice malt syrup, and cacao powder.

You will also need vanilla essence and natural peanut butter.

You could probably add a few of your own ingredients or substitute some if there’s something you don’t like from Katie’s ingredients.

Ingredients:

  • 2 and a 1/2 cups popped popcorn
  • 1/2 cup sultanas
  • 1/2 cup cranberries
  • 1/2 cup pumpkin seeds
  • 1 cup shredded coconut
  • 1/2 cup coconut oil, melted
  • 1/2 cup rice malt syrup
  • 1/4 cup cacao powder
  • 4 tbsp natural peanut butter
  • 1 tsp vanilla essence

Method:

  • Combine all ingredients in a medium bowl and stir gently until the popcorn is well-coated
  • Scoop the mixture into 12 patty pans/silicone muffin liners or muffin tins
  • Place in the fridge to set

The instructions to make this no-fuss dessert are super simple.

All you have to do is throw all your ingredients together and mix it all in, making sure the popcorn is well coated.

Next, scoop them into muffin cases or a cupcake tin. Leave them in the fridge to set.

And that’s all there is to it.

Katie shared the recipe on her Instagram where followers said they were keen to try.
