Foodie’s recipe for drool-worthy steak Birria tacos perfect for Cinco di Mayo

A Reddit foodie has shared his delicious recipe for steak birria tacos which you have to try today for Cinco di Mayo.

The holiday takes place on the same date as the Mexican army's May 5, 1862 victory over France at the Battle of Puebla.

But, in the US and UK it’s often the day when people tuck into Mexican food, margaritas and enjoy some of the vibrant country’s culture.

To celebrate, you might want to rustle up your own feast at home – and that’s where this home cook’s recipe comes in.

Birria tacos have become a bit of a viral trend on TikTok and Instagram over the last month and if there was ever a time to try it yourself it’s Cinco di Mayo.

The unique dish is characterised by the consommé – that’s the broth or meat stew which you used to cook the meat filling in.

To make the tacos you then dip the tortillas in stock before cooking them in a pan of oil to imbue the carbs with tonnes of delicious flavour.

Traditionally, the tacos are filled with goat but mutton or beef is beginning to be used even though it’s not authentic.

And in this recipe steak is the meat of choice which may be easier for us Brits who don’t know where to buy goat.

When cooked you dip the tacos in the consommé for the ultimate spicy, rich, dripping flavour…OMG!

He’s what you need to do:

Steak Birria Tacos

Ingredients:

For the marinade:

  • 3 dried guajillo peppers
  • 1 can chipotle peppers in adobo
  • 1/4 cup white vinegar
  • 1/2 cup crushed tomatoes
  • 5 cloves garlic
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 tsp cumin

For the stew:

  • 1 medium onion chopped
  • 1-2 cinnamon stick
  • 2-4 bay leaves
  • 6-8 whole cloves
  • Chicken stock to cover
  • Meat (choose your favourite)

For the tacos:

  • Corn tortillas
  • Cheese
  • Toppings (up to you: coriander, jalapeños, hot sauce, lime juice are all good)

Method:

  1. Put the dried guajillo peppers in boiling water for 10-15 mins first.
  2. Then, mix all the marinade ingredients in a blender and blend until it’s basically a sauce.
  3. Marinade your meat with it for however long you want (he recommends no less than 2-3 hrs).
  4. To make the stew, saute the onions first for five mins then add in meat and the marinade and other stew ingredients (salt to taste if it requires it).
  5. Let it cook on low heat for an 1 hr to 1.5 hrs.

Once you get to this point making the tacos is super simple.

The foodie explained: “Making the tacos is easy, dip corn tortillas into the stew broth after you cook and throw it on a skillet, put the meat, cheese and whatever else you like on one half of the taco and fold it over flipping once.”

When both sides are golden and crispy add any garnishes like coriander, or lime juice, dip into a small bowl of the broth and tuck in.
